Cheese and crackers — is it possible to improve on this glorious combination? Dining al fresco by a river in Vermont with Castleton Crackers and a selection of local cheeses is one way. Based on a recipe from the 1800s and praised by numerous food writers, these crackers are flaky but don’t break apart when cheese is spread on them. Pile local brie on top for a classic taste. My favorite way to enjoy them is to layer thinly sliced raw onion and spicy brown mustard on top of a slab of cheddar. This pungent combination brings back fond memories of my grandfather coming home redolent of his stop at the local pub along the way.
